CHOCOLATE-COVERED OREO COOKIE CAKE

1 pkg. (2-layer size) devil’s food chocolate cake mix
4 squares Bakers’ Semi-sweet chocolate
1/4 cup (1/2 stick) butter
1 pkg. (8oz.) cream cheese, softened
1/2 cup sugar
2 cups thawed cool larg bowl with mixerwhipped topping
12 OREO cookies, coarsely crushed

Preheat oven to 350 degrees.  Prepare cake batter and bake in 2 (9-inch) round pans as directed on package.  Cook cakes in pans for 10 minutes.  Invert cakes onto wire racks; gently remove pans.  Cool Cakes completely.  Microwave chocolate and butter in small microwaveable bowl on high for 2 minutes, or until butter is completely melted.  Cool 5 minutes.  Meanwhile, beat cream cheese and sugar in large bowl with mixer until blended.  Gently stir in cool whip and crushed cookies.  Stack cake layers on place, spreading cream cheese mixture between layers.  Spread top with chocolate blaze; let stand until firm.  Keep refrigerated.

The Easter Bunny Visits Fox Ridge https://www.foxridgecooperative.com/2018/04/10/the-easter-bunny-visits-fox-ridge/ Tue, 10 Apr 2018 18:33:17 +0000 http://www.foxridgecooperative.com/?p=95 Read more]]> It was a cool Saturday in March when the Easter bunny came to visit the children of the Fox Ridge community.  What a visit it was!  Warm Bunny Hugs, Egg Hunts, and Candy were enjoyed by all.

The Annual Easter Egg Hunt was a success.  There were 36  kids total, 17 adults, and 8 volunteers.  Lots of candy, prizes, coloring pages, and an enthusiastic Easter Bunny!  Special thanks to Marilyn Thomas, Dee Thompson, John Koch, Todd Powell, Shirley Kirby, Holly Murphy, Edgar Lamkin, Nickie Roberts, Jamie Hester, and Austin.  You are all GREAT!  Also, special thanks to Rosie, Dov, and the Maintenance Staff that created the great Arbor backdrop for pictures.  It worked out beautifully.

This is what community is all about.  The comradery shown by the community, in this case for the enjoyment of the children speaks volumes as to the quality of community in which we either live or work in.
